St. Patrick's Day has become SO much bigger than when I was a child, so I am always looking for fun little ways or treats for my kids to help celebrate the day – and today I'll be sharing one of the best St. Patrick's Day desserts ever! I came across the recipe for these SUPER simple treats and changed it up to fit my kids' preferences and wanted to share. This momma loves a no-bake treat that is quick and easy!
Start with brownie pieces cut into chunks and make a thin layer on the bottom. I have used both the brownies from the bakery section in my grocery store or made them myself. Cover the brownie layer with chocolate pudding. Again, you can use pre-made pudding or I prefer instant pudding. (Then I really feel like I “made” them. SUCH a homemaker.)
Next, crumble up pieces of mint cookies of your choice. My kids prefer mint Oreos, but Girl Scout Thin Mints or Keebler Grasshopper cookies would work well, too.
For the green pudding layer, I simply take Jell-o Instant Vanilla pudding and add green food coloring and fill almost to the top.
Finish with whipped cream and add sprinkle colors of your choice!
